Faith Elizabeth’s ~ Banana Split Ice Box Cake

My niece, Faith Elizabeth, is an A M A Z I N G young lady. There isn’t a single thing that she can’t accomplish when she puts her mind to it. Academics, volleyball, softball, basketball, farming, 4-H, make-up, hair, cooking, baking……shall I go on???  I could, that’s for darn sure!!! I love and treasure her so very, very much 💕💕💕.

Several years ago, she made this cake for my birthday and it has been a family favorite ever since. And with her permission, I am sharing it with you!

Ingredients:

  • 16 ounces Cool Whip
  • 8 ounces Sour Cream
  • Small Box Instant Vanilla Pudding
  • 8 ounces Crushed Pineapple / Drained
  • 24 Whole Graham Crackers
  • 2 Bananas / Sliced
  • Topping: Strawberries / Cut, Bananas, Chocolate Syrup

Assembly:
Mix Cool Whip, sour cream & instant pudding. Fold in pineapple.

Using a flat serving plater, place 4 graham crackers in a rectangle. Place 1 Cup of the Cool Whip mixture over the crackers; spread out with a flat edge spatula. Top with sliced bananas. Repeat the layers. Refrigerate.

Right before serving, add the toppings.

Cut, serve and enjoy!
